2020 Today Show “World Chocolate Day” Cookies

Ingredients:

  • 250g Pepe Saya salted cultured butter

  • 450g Plain flour

  • 100g Mr & Mrs P’s -Almond, Peanut, Cacao maple nut spread

  • 150g Caster sugar

  • 150g Brown sugar

  • 2 Free range eggs

  • 3g Ollsons sea salt flakes

  • 3g Vanilla paste

  • Seeds of one vanilla bean

  • 2g Herbies mixed spice powder

  • 8g Baking powder

  • 20-30g Additional South Pacific Cacao Nibs for topping

Method:

  1. Cream butter, brown sugar, white sugar, salt, vanilla extract and vanilla seeds together in a free standing mixer with a paddle attachment. Scrape sides, mix well.

  2. Add eggs one at a time, beat till even, scrape sides.

  3. Add nut paste, beat in well and scrape sides.

  4. Gradually add the sifted flour, baking powder and mixed spice. Fold in well by hand and let the mix rest for 30 minutes at room temperature.

  5. Use a cookie scoop of your desired size and scoop cookie dough onto the tray, press flat to 1cm add nibs and press with a hand wet with cold water to stop dough sticking to your hands.

  6. Bake in a preheated 150C oven. Till edge are lightly golden, remove and allow to cool on the tray.
